RESTAURANT ARK

Copenhagen

The first restaurant in the Nordics to be awarded the Michelin Green Star, and the epicentre of plant-based fine dining in Copenhagen, where I spent two months as the final externship of my culinary studies. An intensive course in organization, technique, multi-day projects, flavor combinations, and the pace of a top-tier restaurant. My tasks ranged from high to low, from stepping into the dishwashing area and organizing storage rooms to working the grill from opening to closing.

 

HYLLIE BRYGGERI / STORMGATAN BISTRO

Malmö
05/2023 – 08/2023

The bistro of the Malmö brewery in Västra Hamnen, where I worked part-time (evenings/weekends) during my studies and the summer months. A highly educational period working with food and beer in combination with a fusion of Swedish/Danish cuisine, as well as planning and executing large catering orders and events.

 

MANTO

Malmö
02/2023 – 03/2023

A plant-based Afghan restaurant at Dalaplan in Malmö, gaining four out of five stars in the food section of Sydsvenskan and a huge following as a result. It’s also where I spent five weeks as part of my culinary education. My tasks ranged from significant prep projects to folding dumplings and managing the order board towards the end of my time there.

 

KRETI & PLETI

Karlskrona
8/2022

A pop-up that took place at the KAI restaurant in Karlskrona, where my role were both chef and marketer. A six-course menu with accompanying beverages that combined KAI’s Japanese flavors with Kreti & Pleti’s plant-based and punk-influenced approach to tasting menus.

I was responsible for building the website, creating a logo, and putting together a press kit beforehand. On-site, I was in charge of menu composition, ingredient selection, fermentation projects in advance, presentation, and coordinating the team from both KAI and K&P.

The pop-up sold out, with over 400 plates served, and now it’s just a memory for those who managed to get a ticket.

 

OTHER EXPERIENCES

  • Plant-based chef-for-hire for individuals and businesses, +1200 plates from planning to serving, with customers from all over southern Sweden
  • Consulting Restaurang Sjörök in creating and serving a plant-based five-course meal to a sold-out dining room
  • Hired chef for an event at Skärva Gård, responsible for menu planning and staff training, to serve 300 plates over two evenings

COPYWRITER / ADTECH LEAD

Responsible for content production for marketing through the Inbound Marketing framework, with deliveries including newsletters, social media posts, SEO-optimized blog posts, and white papers. Involved in and often responsible for the entire process from topic research to proofreading and optimization within the scope of copywriting. Responsible for paid ads on platforms like Facebook, Instagram, Google, and Pinterest. Development of strategy, ordering of graphic materials, optimization, and data analysis for +30 clients with a total budget of over 500,000 SEK per month. Strategic advice in advertising for companies within industries such as home decor, restaurants, fashion, business services, e-commerce, etc.

Responsible for the development and management of brands for multiple clients in various industries such as property tech, banking & insurance, e-commerce, public administration, and more. Advising and producing everything from entire websites and databases to slogans and stickers as a copywriter.

Studied the Restaurant and Food Program at Komvux Malmö, graduating in December 2023 with grade A in all subjects. Took classes and courses in parallel to broaden my knowledge, such as wine tasting, drink pairing, fermentation, and restaurant economy.
